Soft & Fluffy Homemade Pandan WAFFLES

[An overdue post ] We will be attracted by the nice pandan & coconut smell every time we walk pass PrimaDeli. Yes, nice aroma is from their freshly made waffle. We will grab a pc of crisp & hot waffles with thick peanut butter spread if the queue is not long. This recipe is a keeper, it yield soft and fluffy waffles and taste as good even it turn cold. Even if you can’t finish the batter, you can keep it in the fridge for 1 day and it still make good waffle.
Best to go with a cup of coffee...

Soft & Fluffy Homemade Pandan WAFFLES
(Make 8 pcs depending on the size of your waffle pan)
Ingredients:
  • 250g All-purpose Plain Flour
  • 100g Caster Sugar
  • 3 Teaspoon Cornflour
  • 0.5 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 1.5 Teaspoon Baking Powder
  • 2 Egg, yolk and white separate
  • 200ml Coconut Milk
  • 160ml Drinking Water
  • 2 Teaspoon Pandan Paste
  • 60ml Salad/Vegetable Oil

  1. Hi I don’t have pandan paste on hand only pandan essence. How many teaspoon should I use for pandan essence?
