Huiji 8 Teasure Dessert Soup

Oh man, the weather is so cold in Singapore this week & Chinese New Year 2018 is coming too, I am going to have some prosperous number for this dish too. 8 is a very lucky numbers to Chinese. LOL~

Today's Herbal Dessert is going to warm & nourish your body definitely. You do not have to buy many different herbs to make it too. All you need is a bottle of Huiji Waist Tonic to standby in your kitchen. It really save my hassle of getting different ingredients and cooking time.


Huiji 8 Teasure Dessert Soup 

Ingredients
  • Peach Gums (Soaked overnight and remove the impurities)
  • Soaked White Fungus (Soaked till soft and remove the hard stem & impurities)
  • Snow Lotus Seeds (Soaked overnight)
  • Dried Longan
  • Bai Guo
  • Lotus seed (Soaked in hot water for 1 hr before use)
  • Lily Bulbs (Soaked in hot water for 1 hr before use)
  • Red dates
  • Pandan Leaves
  • Honey Rock Sugar
  • Some Huiji Waist Tonics
Steps: 
  1. Add the prosperous 8 ingredients and pandan leaves into a pot. Add in enough water to cover all the ingredients and boil it for 30 mins. Add in honey rock sugar to taste. 
  2. Before serve, add a teaspoon of Huiji Waist Tonic to each bowl. Yes, it is just so easy and fast!

Note: For kids/Adults that can't accept too herbal stuff may omit adding Huiji Waist Tonic.

Pumpkin Creme Brown Rice Spaghetti with Crispy Onions

2017 is coming to an end soon! I hope most of you had accomplished most of your to do list for 2017. I wish my post today are able to encourage you to cook more healthy food at home for your loved one. I really love the bonding time during our meals.

Thanks for San Remo and Singapore Home cooks again for this healthy hampers. I love San Remo's 100% organic brown rice spaghetti which is free of dairy products, egg & yeast. Don't worry about having the impression that this Brown rice pasta's texture is hard and try after cook. Trust me, it taste awesome! 

Let go meatless to end our 2017. These earthy pumpkin puree & sun dried tomatoes paste with cream create a prefect spaghetti sauce. I pan-fried the red onions with olive oil till crispy and served it together with the spaghetti.  This quick, easy & healthy dish is very aromatics & yummy!

Pumpkin Creme Brown Rice Spaghetti with Crispy Onions
(Serve 3 pax)

Ingredients
  • 250g San Remo Brown Rice Spaghetti
  • 6 tablespoon olive oil
  • 1 cup thin slliced red onions
  • 1 clove minced garlic
  • 8 tablespoon Pumpkin puree
  • 1.5 tablespoon San Remo Sun-dried tomatoes & Garlic sauce
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon dried chilli flakes, optional 
  • 120 ml of pasta water
  • 6 tablespoon cream
  • salt to taste
  • Some fresh parsley for garnish 

Steps
  1. Cook the spaghetti in salted water according to the package direction. Drain the spaghetti and reserve the pasta water for the sauce later.
  2. Heat a skillet, add in olive oil and red onions. Sprinkle some salt on the onions and cook it over medium high heat till it brown and crispy. Do not let the onions burnt. Scoop out the crispy brown onions on a plate for later use. 
  3. Use the same skillet, add in the garlic, dried chilli flakes, dried parsley flakes, sun-dried tomatoes & garlic sauce, pumpkin puree and give a good stir. Add in the pasta water and bring the sauce to boil. Do adjust your the volume of the pasta water to get the consistency you preferred. Once the sauce is boiling, lower down the fire and add in creme and mix well. Add in salt to taste. 
  4. Lastly, add in the cooked spaghetti and toss it well with the sauce. Serve it on plate. Add the crispy onions on the spaghetti and garnish with some fresh parsley. It's ready to serve!
Side note:
How to make pumpkin puree: Use fresh pumpkin. Remove skin and cut into cubes. Steam it for 20 mins and blend it well with a blender.

Casa Rinaldi Mystery Box Challenge & a giveaway

Ding Dong! Yippee, I have received a mystery box from Casa Rinaldi. The challenge given is to use all the items received to whip out a meal. :) I am ready for the game! 
I am going to prepare a Christmas lunch for my hubby. I hope this post can give u some ideas for the upcoming Christmas treat preparation too! 
Among the ingredients received, I love the Casa Rinaldi Black Balsamic Pearls (Perla Nerla) the most! My first time using & fall in love with it. We love the pearls bursting in every bites when eating. It’s so refreshing & tasty. It’s great for garnish & add flavor to the dish too! 


Egg & Cheese salad served with sun dried tomatoes & balsamic vinegar pearls
(Serves for 2 pax)

Ingredients
  • 1 head Romaine Lettuce
  • Some cream cheese wedges 
  • 1 hard boil egg
  • Balsamic vinegar pearls 
  • 2 slices sun dried tomatoes
  • Some salt & pepper to taste
  • Extra virgin olive oil 

Steps:
  1. Plate the lettuce first. Assemble the eggs, cream cheese, sun dried tomatoes & top with some balsamic vinegar pearls. Lastly, spray some extra virgin olive oil, salt and pepper before serve. 

Bay leaves stew chicken served with Gnocchi
(Serves for 2 pax)

Ingredients
  • 3 chicken thighs 
  • 10pcs bay leaves 
  • 1 tablespoon dried parsley flakes
  • 6 cloves garlic
  • 3 slices sun dried tomatoes 
  • 400ml chicken broth 
  • Some Salt & black pepper
  • Some Extra virgin olive oil 

Prepare the Gnocchi
  • 300g gnocchi
- Boil water in a pot. Add in some salt & oil. Add in the gnocchi when water is boiling. Cook for 5mins. Drained it & set aside for later use. 

Garnish
  • Balsamic vinegar balls 
  • Dried parsley flakes 
Steps
  1. Washed and dry the chicken thighs with kitchen towels. 
  2. Marinate it with some salt, black pepper & extra virgin olive oil. 
  3. Heat up the skillet. I spray some extra virgin olive oil on the pan. Pan fried the both side of the chicken thighs for 5 mins each. 
  4. Transfer the chicken thighs on a baking dish or cast iron pot. Add in the chicken broth, sun dried tomatoes, bay leaves, garlics, dried parsley. Give it a quick mix and send the dish to oven to baking for 30 mins at 170C. 
  5. Plate the cooked Gnocchi on a plate, Lay a pcs of nicely baked chicken thigh, add the sauce on top of the chicken & gnocchi & garnish with some dried parsley & balsamic vinegar pearls. It’s ready to serve!

Yummlicious Marmite Clam Pasta

Love or Hate Marmite? One may feel that Marmite just taste or smell horrible but ones may just simply love it. Marmite gave a umami flavor. People that love these flavors will agree with me that Marmite is yummy and will get hooked on it. It's always hard to please everyone. Personally, we love Marmite very much! My kids never fail to praise my kitchen smelling so heavenly when cooking meal with it.

I had shared the goodness of this little bottle of Marmite earlier on HERE. I am going to share with you another simple recipe that u can simply have your meal in 30 mins. Trust me the sweetness from the clam & salty unique taste from Marmite makes the dish taste AWESOME. Who will say NO to this Marmite Clam Pasta?

Marmite Clam Pasta
Recipe by Taglicious
(Serve 4 pax)

Ingredients
  • 500g Clams (I used flower clams)
  • 300g Spaghetti (Cooked in water with Salt & oil)
  • 2 tablespoon Olive oil
  • 3 cloves garlic 
  • Chopped Coriander
  • 1.5 tablespoon Marmite
  • Black pepper, to taste
  • Some pasta leftover water

Steps:
  1. Heat up a skillet. Add in oil & garlic and sauteed it till fragrance.
  2. Add in the clams and cover the skillet to let it cook for 2 mins.
  3. Add in the cooked pasta, Marmite, chopped coriander & mix everything together.
  4. Add in the pasta water slowly and mix well till u get the consistency u want for this dish.
  5. Last, sprinkle black pepper and the dish is ready to serve. Enjoy!

Marmite Mushroom Rice [Vegan]

Those readers that have been following me should know my cooking style by now. I always go for simple, quick and easy recipe meal. Today I want to go for a meatless meal. I did a ransack in my kitchen, I found some mushrooms so I decide to cook a pot of rice to fill up the hungry tummies.

In order to make it healthier, I used Marmite as one of my seasoning to this dish. Do not underestimate this small bottle of wonder. Marmite is made of a few simple ingredients: yeast extract, salt, vegetable extract, spices and vitamins (B1, B2, B3, B9, B12). Marmite is gluten free and high in vitamins. It is suitable for vegetarian and low in calories. Oh my, Marmite is a must have condiment in my kitchen. 

When the pot of rice is cooking, the aroma from pot just smells so good. My kids keep asking what am I cooking and when their meal is ready. Haha!
Marmite Mushroom Rice [Vegan]
Recipe by Taglicious
(Serve for 4 pax)

Ingredients
  • 1.5 cups of rice
  • 300ml water
  • 100g Swiss brown mushrooms
  • 100g Portobello mushrooms
  • 150g King Oyster mushroom
  • 2 tablespoon Extra virgin coconut oil
  • 1 tablespoon Marmite
  • Some Coriander
  • 3 cloves Garlic
  • Black pepper, to taste
  • Spring onions, for garnish
Steps
  1. Wash and drain the rice. Set aside for later use. 
  2. Slice the mushrooms into desired size (Do not washed the mushroom with water, use a damp cloth to clean it instead) & minced the garlic & coriander. Set aside.
  3. Heat up a pot. Add in coconut oil and garlic. Sauteed it till garlic is brown.
  4. Add in all the mushrooms and keep stirring till it soft.
  5. Add in rice.
  6. Add in the marmite, chopped coriander, black pepper and mix everything well.
  7. Add in water and mix well. Cover the pot with a lid and let it cook for 15 mins. After 15 mins, off fire and let the rice to steam in the pot for another 10 mins.
  8. Before serve, add in chopped spring onions. 

Note:
1) You may use your electric rice cooker for this dish. Follow steps 1-6 then transfer everything to your rice cooker and add in water mix well and let your electric rice cooker to do wonder for u.

Nourish & Beauty Mushroom, White Fungus & Chicken Soup with Huiji Waist Tonic

For busy adults like us, we need to intake some tonic to keep our body healthy. Instead of buy, store & brew different kinds of herbs, what I need is to have a bottle of Huiji Waist Tonic at home. Mushroom, White Fungus & Chicken Soup with Huiji Waist Tonic
(Recipe by TAGlicious & serving for 4 pax)

Ingredients
  • 1 kampong chicken, about 1-1.2kg
  • 12pcs dried shiitake mushroom, soaked
  • 1 pcs of white fungus, soaked
  • 5 big red dates
  • 1 litres water (I used my own collagen soup)
  • 50ml Huiji Waist Tonic
  • Salt to taste

Steps:
  1. Add everything into a pot except Huiji Waist Tonic & Salt and bring it to boil for 60mins.
  2. Before serving, add in Huiji Waist Tonic & salt to taste.
  3. Serve warm.

My Pinkie THERMOS SHUTTLE CHEF

No need to wait for special occasion to receive present from my Dear. He got me a nice pinkie 1.6 litres THERMOS shuttle chef. This little pinkie add sweetness to my kitchen and it will be my full time rice cooker. I used to have those non-stick electric rice cooker but it decided to retire after 3 years. Moreover, there are many scratches on the non-stick pot made me very uncomfortable to use it. Thermal cooking is not new in my kitchen and I love THERMOS brand most because of their attractive color & their thermal technology of retaining heat is better compare to other normal brands. I love the convenience of having them to prepare meals/keep the meals warm at home or outdoor activities too. All you need to do is to bring your ingredients into the inner pot and bring it to boil for 15 mins, turn off your stove and transfer them to outer container, close and that is it. The heat is retained to continue to cook the food without any constant attention for hours. Normally, I will prepare soup the night before, re-boil it in the morning and have the soup serve for dinner at night to get the best flavor of it. Best of all, it is energy saving , $ saving & time saving.

Normal white rice
(Used 1.6l Thermos shuttle chef)
  • 1 cup rice
  • 1 cup water
Steps:
  1. Washed and drained the rice.
  2. Put the rice & water into the inner pot. Bring it to boil (about 5-6 mins). Off heat.
  3. Transfer the inner pot to outer container, close and that is it.
  4. Nice & fluffy rice will be ready after 20 mins.
Notes:
  • This 1.6l Thermos shuttle chef is designed for 2 person for small portion cooking. It should be enough to cook 2.5 cups of rice in it. My family don’t eat a lot of rice so this size is just nice for us.
  • You can use this shuttle chef for other purpose too like dessert, soup, stew, porridge.

Butter Rolls

Simply love these buttery, fluffy & soft butter rolls. To make these butter rolls is simple. Just knead the dough to window pane stage and let it proof, shape it and bake it. These rolls goes well with jam, sausages, soups or even itself.

I am glad to receive a parcel of Blue Jacket flour for trial. I get to know more about these flours from Baking Taitai & some bakers mentioned that Blue Jacket Flour is close to Japanese high quality flour too. This made me very keen to give it a try. Result of this rolls using Blue Jacket flour is really good with light and soft texture. 
I am going to use these buttery rolls to go with sausage for my kids tea break later.
Soft & Fluffy butter rolls
Buttery Rolls
Recipe by TAGlicious
(Made 14 pcs)

Ingredients
  • 330g Bread Flour (I used Blue Jacket Bread Flour)
  • 170g water (Room temperature)
  • 40g sugar
  • 1 teaspoon salt
  • 2 teaspoon instant yeast
  • 2 egg yolks
  • 50g butter, soften
Steps
  1. Mix all the ingredients except butter in a mixing bowl, combined and knead till it form a dough (I used my Zojirushi BM (Dough setting) to do the kneading).
  2. Add in the butter and continue to knead till it become a elastic and smooth dough. Cover it with cling wrap and let it rise till double it's size. It normally take 45 mins for weather like Singapore.
  3. Divide the dough into 40 g each and roll it into balls and let it rest for 10 mins.
  4. (Look at the pictorial) Dust the working top with flour, take a small dough, use a rolling pin to flatten it. Close 2 ends like a roll. Try to shape it like a cone and flatten it again. Roll it up like a swiss roll. Place the rolls onto a baking tray with baking sheet (Simple love my new buy, Tovolo silicone baking mat). Repeat the rest. Let it proof for another 30-45 mins.
  5. Before sending the buns into the pre-heated oven (180C),  Bake it for 15 mins or till it's top become golden brown.
  6. Cool it on a wire rack before serve.

Seafood Tomatoes Soup in 30 mins

It’s a Monday blue again! After a long day of work, what I need is simple and nutritious meal served to my family. Best is minimal washing of dishes. Haze is bad today, it is affecting my mood too. I can’t crack anymore idea! Look into my cabinet, I found a bottle of Alce Nero Organic Chunky Tomato Puree with Basil sauce. It's my savior. I can simply whip out a Tomatoes Seafood Soup within 30 mins and I do not have to worry about the preservative, pesticide & chemical as the sauce is ORGANIC. I am going to stock up more cans of these organics tomato puree for rainy days!

No mood to cook yet want a simple heart-warming dinner on your table for your loved one? Try this. 

Simple & Healthy Seafood Tomatoes Soup

Seafood Tomatoes Soup in 30 mins         
(Serving for 3)
(Recipe by TAGlicious)

Ingredients:
  • 1 bottle Alce Nero Organic Chunky Tomato Puree Basil 500g
  • 100g shrimps
  • 200g Squid
  • 300g Seabass fish fillet
  • 1 medium size yellow onion
  • 2 tablespoon of olive oil (I used Alce Nero Organic Extra Virgin olive oil)
  • 2 fresh tomatoes
  • 500 ml water
  • Pepper & Salt to taste
All you need. :)
Steps:
  1. Heat up the Pot, Add in olive oil & onions and sauteed it.
  2. Put all ingredients into a pot(I used my Le Creuset Cast iron pot). Close lids and simmer under medium low fire for 20 mins. Ready to serve. 

I cook some Alce Nero Organic Animal Pasta for my kids to go with the Seafood Tomatoes Soup. Isn't cute?

  1. You can add in your preferred seafood in the soup.
