Glutinous Chicken Rice

Simply love this classic dim sum dish since I am young. Every bites of these chewy,sticky and savory rice with chicken is simply indulgence. Glutinous chicken rice can be prepared at home too. This dish is my ah gal's favorite! I will prepare more and freeze it for later consumption usually.

Glutinous Chicken Rice

(To make 4 serving)

  • 350g glutinous rice, washed, soaked for 2hrs.
  • 1 tablesooon dried shrimp, washed, soaked for 10 mins
  • 1 stalk of chinese sausage, sliced 
  • 1.5 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 2 coves small onions, minced
  • 1 tablespoon oyster sauce
  • Pepper, to taste
  • 150ml water, for stir frying the glutinous rice
Chicken & mushrooms 
  • 300g chicken, I used chicken fillets 
  • 8 dried shitake mushrooms, Soaked till soft and slice it
  • 2 tablespoon oyster sauce
  • 0.5 tablespoon sesame oil
  • Pepper, to taste
  1. Soaked the glutinous rice and marinate the chicken for 2 hrs.
  2. Heat up a pan and add in the sesame oil. Sauteed the garlic, dried shrimps and onions till fragrance.
  3. Add in the drained soaked glutinous rice and stir fry it.
  4. Add in the oyster sauce, pepper and stir fry well.
  5. Add in the water gradually (about 2-3 tablespoon of water) and continue to stir fry it till it dries up. Continue this step till u finish using up the 150 ml water.
  6. Off fire and ready to assemble the Glutinous chicken rice bowl.
  7. Place 3 slices of Chinese sausages in the bowl.
  8. Add in the marinated chicken & mushrooms equally in the bowl too. 
  9. Add in the glutinous rice and fill up the bowl equally. 
  10. Steam them in a steamer for 30 mins and it is ready to serve.

  • Any extra serving can be freeze for later consumption after cool down. Steam it again for 20 mins when you want to serve them.

Blueberry Oatmeal Pancakes

How's everyone doing recently? I am lazy to come into this blog to update my status recently. I hope everyone is fine. Today I am going to share with you a very healthy, soft and fluffy pancake. It do not need any proofing time. You can wake up a little earlier to prepare on weekend and enjoy it with yogurts & fruits. I am sure your family members will wake up from the superb aroma when u pan frying these Blueberry Oatmeal Pancake.

Blueberry Oatmeal Pancakes

(To make 10 standard size Pancakes)

Egg yolk batter
  • 3 Egg yolks
  • 2 tablespoons coconut oil
  • 3/4 cups milk 
  • 8 tablespoons oats
  • 1/3 cup plain flour
  • 1/2 teaspoon of baking powder
  • 125g blueberries
Egg white meringue
  • 3 Egg whites
  • 2 tablespoon sugar

Egg yolk batter
  1. Separate the egg yolk and white in separate bowl. (Note: Please use clean and dry bowl for egg white in order to achieve soft peak when beating it)
  2. Add in coconut oil to the egg yolk and mix well.
  3. Add in milk and mix well.
  4. Add in oat and mix well
  5. Add in plain flour & baking powder and mix well.
  6. Add in Blueberries and fold into the batter. The egg yolk batter is ready. Set aside for later use.
Egg white meringue 
  1. Whip the egg white with a electric beater for 30 sec.
  2. Add in sugar and continue to beat the egg white till soft peak.
Combine 2 batter together
  1. Fold in 1/3 of the meringue to the egg yolk batter.
  2. Fold in till u see no more meringue. 
  3. Continue the remaining meringue using the same method. Pancake batter is readyPan-fry the pancake
Pan fry Pancakes
  1. Heat up a non stick pan.
  2. Add in one scoop of batter on it and let it cook for 3-4 mins under medium low fire.
  3. Turn the pancake to the other side and pan fry it for another 1-2 mins. Continue the same steps till u finish using the batter. 

  • I used full cream milk to give a more milk taste.
  • Coconut oil can be replaced with other oil but coconut oil give a better aroma.
  • Blueberries is optional. Please opt it out if you are not a fan of it.
