Blueberry Oatmeal Pancakes

How's everyone doing recently? I am lazy to come into this blog to update my status recently. I hope everyone is fine. Today I am going to share with you a very healthy, soft and fluffy pancake. It do not need any proofing time. You can wake up a little earlier to prepare on weekend and enjoy it with yogurts & fruits. I am sure your family members will wake up from the superb aroma when u pan frying these Blueberry Oatmeal Pancake.



Blueberry Oatmeal Pancakes

(To make 10 standard size Pancakes)

Ingredients
Egg yolk batter
  • 3 Egg yolks
  • 2 tablespoons coconut oil
  • 3/4 cups milk 
  • 8 tablespoons oats
  • 1/3 cup plain flour
  • 1/2 teaspoon of baking powder
  • 125g blueberries
Egg white meringue
  • 3 Egg whites
  • 2 tablespoon sugar
Steps:

Egg yolk batter
  1. Separate the egg yolk and white in separate bowl. (Note: Please use clean and dry bowl for egg white in order to achieve soft peak when beating it)
  2. Add in coconut oil to the egg yolk and mix well.
  3. Add in milk and mix well.
  4. Add in oat and mix well
  5. Add in plain flour & baking powder and mix well.
  6. Add in Blueberries and fold into the batter. The egg yolk batter is ready. Set aside for later use.
Egg white meringue 
  1. Whip the egg white with a electric beater for 30 sec.
  2. Add in sugar and continue to beat the egg white till soft peak.
Combine 2 batter together
  1. Fold in 1/3 of the meringue to the egg yolk batter.
  2. Fold in till u see no more meringue. 
  3. Continue the remaining meringue using the same method. Pancake batter is readyPan-fry the pancake
Pan fry Pancakes
  1. Heat up a non stick pan.
  2. Add in one scoop of batter on it and let it cook for 3-4 mins under medium low fire.
  3. Turn the pancake to the other side and pan fry it for another 1-2 mins. Continue the same steps till u finish using the batter. 

Note:
  • I used full cream milk to give a more milk taste.
  • Coconut oil can be replaced with other oil but coconut oil give a better aroma.
  • Blueberries is optional. Please opt it out if you are not a fan of it.
