Shanghai Cheesy Mooncake

Another all time favourite, Shanghai Cheesy Mooncake with lotus seed & salted egg. This year, i tried to use the cheesy skin from this recipe, it turn out well too. Do give it a try, you won't regret after trying it.


Shanghai Cheesy Mooncake
(Make 16pcs)

Cheesy Mooncake skin

(Prepare 16pcs of 45g skin dough ea)

Ingredients
  • 85g caster sugar
  • 195g butter, soften
  • 33g eggs
  • 38g condensed milk 
  • 378g Cake flour
  • 25g Parmesan cheese powder (Grind it into powder)
Filling ingredients:
  • 800g of ready made Lotus Paste
  • 8 salted egg yolk, Steamed and cut into halves
Topping:
  • 1 egg yolk
  • Some white sesame seeds

I used the same recipe for a 50g mould (25g paste & 30g skin dough). These Cheesy Shanghai Mooncakes definitely look better than the ordinary round shape.

Salted egg Custard Moon cake ~ 奶皇酥月饼

Mid Autumn festival is around the corner! This year I tried this new Custard Moon cake (奶皇酥月饼)。 Though the outlook is not very nice but taste very creamy good! Do you want to give it a try too?

(Made total about 24pcs of mooncake, I using 50g mooncake mould)

Salted egg custard

Ingredients

  • 54g Cake flour
  • 54g Parmesan cheese powder (Grind it into powder)
  • 54g Milk powder
  • 40g caster sugar
  • 90ml condensed milk
  • 15ml milk
  • 2 egg yolk
  • 200ml coconut milk
  • 132g butter, soften
  • 3 salted egg, steam and cut into small pcs

A Hearty Breakfast & A loaf of Black Sesame Bread loaf

Rise & Shine! A Hearty breakfast with luncheon meat, eggs, sautéed mushroom, veggies & homemade black sesame bread prepared last weekend. Best to serve with a cup of .

(Reference from Baking Taitai's Wu Pao Chun & modified into Black Sesame loaf By Taglicious)
Bake one 450g bread loaf by Zoji (Soft mode)

Ingredients

  • 210g Fresh milk
  • 270g bread flour
  • 30g black sesame seed powder (I got mine from Daiso)
  • 30g caster sugar
  • 2g salt
  • 3g instant yeast
  • 15g butter

Wholemeal Peanut Butter Cookies


For peanut lovers. Wholemeal Peanut Butter Cookies! By adding in wholemeal flour, it will give a nutty flavor & texture to the cookie. Even the little boy at home cannot resist the temptation and he ate 3 of it at one go with a cup of cold milk. It's a good way to clear your peanut butter at home too! 





Wholemeal Peanut Butter Cookies

Ingredients 

  • 70g  Wholemeal flour
  • 110g  Cake flour
  • 80g Peanut Butter
  • 70g Butter (soften)
  • 50g Caster sugar
  • 1 egg (about 55g without shell)

Egg Spinach Sushi rolls & Onigiri

When you are sick of having breads or cakes for breakfast, making sushi/onigiri will be better option for your little one. You can prepare it for their recess too. Oh yes when u are running out of seaweed sheet, no worry. We can make egg sheet for simple sushi roll too. I learnt this from WokkingMum Elaine when I just got my Happycall 2years ago. She is a creative and good blogger. Do follow her blog if you want any interested ideas for your little ones!
Japanese style Lunch requested by my little ones


Egg Spinach Sushi
(Make 1 roll)

Ingredients
  • 2 eggs
  • A handful of chopped spinach
  • Some Japanese Sushi rice (Recipe from Justonecookbook)
  • 2 crabsticks

Tool: Happycall doubled side pan (If you don’t have one, you can try to make this egg sheet using a big non-stick Pan too)

Onigiri with shrimps & Sesame sauce

Ingredients
  • Sushi Rice  (Recipe from Justonecookbook)
  • Small shrimps
  • Japanese Sesame sauce
  • Sesame seeds
  • Some seaweed sheets
Tool: A triangle Onigiri mould (I got mine from Daiso)

Note: You can change to anything u want to wrap in.

Dark Brown Sugar bread loaf - 黑糖吐司

You will see baker using dark brown sugar as their ingredient in their baking because Dark brown sugar has a very strong molasses flavor, while light brown sugar is a little drier and has a much milder flavor. Last night, I used it to make a loaf of bread. The taste of the bread doesn't disappoint me. It is so yummy until it can be eaten by its own without any spread. I am using my Zoji Bread maker, it does give a hard crust but inner texture of the bread is soft. 

Dark Brown Sugar bread loaf - 黑糖吐司 
(Recipe by Taglicious, Knead and baked by Zojirushi Bread maker)
(Mode: Soft - 3hrs)
500g bread loaf

Ingredients

  • 225ml Fresh milk
  • 40g Condensed milk
  • 280g Bread flour
  • 23g Cake flour
  • 25g Dark Brown Sugar
  • 3g instant yeast
  • 1g of salt
  • 24g of soften butter
Steps by Zoji (Adjust to your BM accordingly if you are using other brand)
  1. Add in the ingredients according to your BM.
  2. Add in butter @ 2.35hr (Zoji Soft Mode).
  3. Remove blade @ 1.45hr and shape into a ball and put back to BM for 2nd proofing and baking. (Zoji Soft Mode).
  4. After 3hrs, you will have a loaf of nice aroma and soft sweet bread loaf.
Taglicious's Note:
  • If you are busy and can't stand by the machine, you can simply add everything into the BM and let your machine do the whole kneading and baking process.

I am a working mum & share recipe for Honey, Soy & Ginger Chicken Chop

Someone asked me before, why I can do so many things in a day. How do I find so much time & energy? My answer to her is cos I love my family! Love give us energy to move on in life. I won’t have leisure time for TV & ME time at night after work on weekdays. Yes I am a full time working mum without a helper. I need to juggle my work, family and my own time properly. I am lucky to have my in-law to take care of my kids when my hubby & I are away from work. I will seldom bring work home unless there is no choice. I will not grumble on my work once I reach home no matter how unhappy I am. Yes, do not bring “work” stress home.  My way to let off stress is to bake. I will wait for my kids go to their dreamland before I pursue my passion. At times, my supportive hubby will take care of my kids when I went for a short run too! 

Let me share with you my daily time-table for weekday.
5.45am – Wake up and prepare breakfast first.
6.15am – Wake up girl up to prepare her for school.
6.30am – Continue to prepare my lunchbox(at least 2x per week), do the clean-up of my kitchen & etc
(Hubby will bring my gal to school by 7am)
7.10am – Dress up myself to work
7.30am – Wake my boy up and dress him for school.
7.45am – Bring my boy to school and off to work. (Lucky, my hubby drive me to work everyday)
8.30am – 5.30pm – TAG @ work
6.30pm – Reach home, take over 2nd shift from my in law. Start to cook dinner. My kids are cooperative, they will sit down to enjoy their TV program while I prepare their dinner.
7.15pm – Dinner served, eat, wash and tidy up my house.
8pm – Clean up my kids & myself down for bed time.
8.15pm – 9.45pm – Family bonding time (Doing homework, reading and communication time)
9.45pm – Brush teeth, drink their milk and tuck them to bed. My kids will never forget their goodnight kiss to me and hubby ~ So sweet! 
10pm – Kids in dreamland and my ME time starts! Hahahha…

Weekend is my marketing, shopping, doing house chores, family bonding & baking time! 

Of cos, I have a supportive hubby helping out on house chores to lighten up my work at home. 
I'm not complaining but enjoying it as a mother, wife & myself! I hope this post will inspire you to keep going!  加油, all Mummies! We are all so great!

  • 4pcs boneless chicken thighs
  • 4 tablespoon of light soy sauce
  • 3 tablespoon of honey 
  • 1 tablespoon of grated ginger
  • 1.5 teaspoon of minced garlic
  • 1 tablespoon of sesame seed

Healthy Korean Bibimbap

Bibimbap is a signature Korean dish that means “mixed rice” that is served as a bowl of white rice topped with sautéed vegetable, chilli pepper paste, soy sauce. A raw or fried egg and sliced meat are common additions to the dish. The ingredients are stirred together just before eating it. Best is to served it HOT on a heated stoned bowl. Today I try to replica this traditional dish in an easier method since I got my Homemade Kimchi and most of the items are ready in the fridge. For kids version, I didn’t add in the chilli pepper paste & kimchi for them. Surprisingly, they love this dish too.

Healthy Korean Bibimbap
(Serving for 2adult & 2 kids)
Recipe by TAGlicious

Ingredients
  • 300g of chicken thighs, sliced and marinated it with 1 tablespoon of Korean all-purpose cooking sauce & 1 teaspoon of Korean Sesame oil
  • 200g Spinach
  • ½ Bejing Cabbage, shredded
  • 1 carrot, peeled and shredded
  • 5pcs Dried Shiitake mushroom, soaked and sliced. (Seasoned with 1 tablespoon of Korean all-purpose cooking sauce when sautéed it)
  • 100g  Enoki mushroom
  • A portion of Kimchi 
  • Some Korean chilli pepper paste
  • 2 raw eggs yolks
  • Roasted Sesame seeds, topping
  • 3 bowls of cooked rice, you can use Japanese rice for best result

  1. Vegetables’ choice can be changed as per your preference.
  2. Egg whites can be fried to serve for the kids else saved it for Macarons or other purpose.
  3. I got my Korean’s condiments from NTUC. I believed you can get it from most big supermarket now in SG. 
  4. For those interested in my Korean Bowl, I got it from Cold storage Korean Fair some time ago.

XO Durian Ice-cream (No Churn version)

Who can resist these Durian Ice-cream? No one can resist it including my 2 kids at home. Seeing them enjoying every bites made me so happy. You can easier whip out these no churn ice-cream at home without an ice-cream maker. Amazing, isn’t it? I used XO Durian to make this batch, it really taste so heavenly yummylicious. Don’t blame me if your waistline growing horizontally as it is irresistible.  Heehee!

  • 20g Honey
  • 20g Coffeemate
  • 300g Thickened Cream
