Sugar Cinnamon Gnocchi

Today, I am going to share with you a very simple, quick snack for kids using Gnocchi by Casa Rinaldi. No one will reject this tiny crispy churros taste alike snack coated with sugar and cinnamon. It's just taste simply awesome & addictive. Don't say I didn't warn u. Let starts!


Sugar Cinnamon Gnocchi
(Serve 2 pax)
Ingredients
  • 300g Gnocchi
  • 100g fine sugar
  • 10g Cinnamon powder 
  • Oil for deep frying

Steps:
  1. Mix the sugar and cinnamon powder together on a plate.
  2. Heat the oil in a small pot.
  3. Add in Gnocchi and deep frying it till golden brown.
  4. Scoop out the golden brown Gnocchi and place it on kitchen towel to drain off the excess oil.
  5. While the Gnocchi is still warm, transfer it to the sugar cinnamon mix and give it a good coating. Alternative, place the sugar cinnamon mix & Gnocchi in a plastics bag and SHAKE well. Serve it warm! yum~~~

Gnocchi (NYOH-kee, NOH-kee), are plump little lumps of pasta made mostly of potato. The gnocchi is eaten as a form of pasta dish in Italy. The gnoochi are cooked in salted boiling water and is considered cooked when they floats to the surface. The Italians usually eat it with pasta sauce as part of their staple dish. Some of them panfry this and coat with cheese.

Cheesy Korean Gnocchi

This is the first time I used this Gnocchi in my kitchen. I am glad that I am given a chance by Casa Rinaldi & Singapore Home Cooks to try out this product. Do u know what is Gnocchi? Gnocchi is small dumplings made from potato, flour and usually serve with a sauce. It is widely use in Italian cooking. You can make your own Gnocchi at home but for busy working mummy like me, these convenient pack of Gnocchi come to my savior. Instead of using these Gnocchi it in the traditional Italian way, I will like to use use it to whip out a Korean's dish.

Every Gnocchi is coating with the spicy chilli paste and oozing cheese. To my surprise, my hubby & kids give thumb up for it. This dish goes very well with a glass of BEER! Say CHEESE & CHEERS to it!

Cheesy Korean Gnocchi

(Serve 4 pax)
Ingredients
  • 500g Gnocchi
  • 300g Chicken breast (seasoned with some salt, black pepper, sesame oil & corn flour)\
  • 1/2 yellow onions, wedged 
  • 1/2 cup Kimchi, cut into small pcs
  • Some spring onions
  • 1 cup mozzarella cheese
  • 1 portion of Korean chilli paste mix ( refer below for recipe)
  • Oil
Korean Chilli paste mix 
  • 2 tablespoon Korean chilli flakes
  • 2 tablespoon fish sauce
  • 1 tablespoon Korean chilli paste
  • 3 cloves minced garlic
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
Steps
  1. Pan fried the Gnocchi in a skillet with oil till the surface of the Gnocchi is slightly brown. Scoop it out and set aside for later use. (This is to prevent it to be soggy in this dish)
  2. On the same skillet, add in a little more oil and stir fry the onions till brown and soft.
  3. Add in chicken and stir fry till with the onion for 5 mins.
  4. Add in the Gnocchi, kimchi & korean chilli paste mix & spring onions into the skillet and mix all well.
  5. Top the mozzarella cheese on the dish and bake it for 15 mins at 170 degree or till the cheese is golden brown. Serve it hot!
Look at every Gnocchi is coated with the Korean chilli paste....Yummy Chewy~~~~

Salmon with Lime Coconut Lemongrass sauce


Lime Coconut Lemongrass sauce
(Serve 3-4 pax)
Ingredients
  • 200ml AYAM coconut milk
  • 1 shallot, sliced
  • 1 tablespoon coconut oil (you can use any vegetable oil)
  • 1 lime zest
  • 1 tablespoon lime juice
  • 1 stalk of lemongrass, smashed
  • 1 chilli padi, optional if u don't take spicy
  • 2 teaspoons sugar
  • 1 tablespoon fish sauce, to taste
  • 5 basil leaves, sliced 
Steps:
  1. In a small sauce pan, heat up the coconut oil and sauteed the shallots till fragrance.
  2. Add in the coconut milk, smashed lemongrass, lime zest and simmer at low fire for 5 mins. Keep stirring the sauce to avoid burn.
  3. Add in fish sauce and lime juice to taste. (Adjust to your taste preferred)
  4. Add in chilli and off fire. Set the sauce aside while u pan fried the salmon. Refreshing, slightly spicy coconut sauce serve the sauce on rice & salmon. Add sliced basil leaves on the rice & salmon before pouring the sauce on it. 

Coconut Lemongrass sauce served well with any meats! Give it a try and enjoy!
