Very Healthy Homemade Granola!

For those who like Oat, nuts & mixed fruits will fall in love with this healthy food. I get to know that we can make our own granola at home from food-4tots. I love this recipe simply. I had baked it several time and my family loved it very much. I will like to share with you this very healthy food and hope that you can give it a try to make this at home too. This time, I didn't cook the liquid mixture and it turned out very well too. Save me one step for a lazy person like me. :P

Homemade Granola
(Recipe reference from food-4tots and did some modification by Taglicious)
Made 1kg Granola



Ingredients:
Oats & nuts

  • 360g Rolled oats
  • 90g Rye oats
  • 50g Baby oats
  • 80g Sunflower seeds
  • 70g Cashew nuts, cut into smaller pcs
  • 40g Almonds flakes
  • 40g Walnuts, cut into smaller pcs
  • 20g Chia seeds
Dried fruits
  • 70g cranberries, cut into smaller pcs
  • 70g apricots, cut into smaller pcs
Liquid mixture
  • 180g apple juice
  • 100g pure olive oil
  • 110g maple syrup
  • 1/4 salt
  • Some lemon zest, optional 
Taglicious's Note: 

  • You can use replace to any kind of oat, nuts, dried fruits as long as you follow the measurement. 
  • Rye oat & baby oat give a extra crunchiness in this granola.
  • You can replace maple syrup with honey but maple syrup give a nicer smell.

Braised Vegetarian Mushrooms & Tofu

Running out of idea of what to cook for a meatless day? Yes, I will accompany my hubby to eat vegetarian every 1st and 15th of the lunar month. This is a long overdue post as I have no mood to update my blog recently. Finally, I "packed up" my moody mood and pen down this recipe and share with you all.
Braised Mushrooms & Tofu Donburi

Braised Mushrooms & Tofu
(Recipe by Taglicious)
(For 3-4 serving)
Ingredients
  • 10pcs medium size dried shiitake mushrooms (soaked and sliced it)
  • 1 pack of brown Enokitake Mushrooms
  • 1 pack of rectangle white silken tofu (cut into 8pcs)
  • 1 tablespoon of chopped ginger
  • 1 tablespoon of oil
  • 2 tablespoon dark soy sauce
  • 1 tablespoon of light soy sauce 
  • 1 tablespoon of vegetarian mushroom sauce 
  • 1.5 tablespoon of brown sugar (You can use white sugar too)
  • Pepper to taste
  • Some corn flour + water for thickening the gravy
Note: Serve it with some greens & rice to make it a complete meal.

Happy Mid-Autumn festival & Mickey Mouse Mooncake

When I am young, having lotus paste moon-cake is a luxury but my mum will buy us those piggy moon-cake in a basket instead. However, I will never forget the happiness of receiving those little piggy basket moon-cake during mid-autumn festival. I will use the basket as a marketing bag and act as if I am going to a shopping center. Kids nowadays are very fortunate, they won’t know that kind of simple happiness we experienced.
I came across this recipe share by Baking Taitai and since I have all the items on hands so I whipped this moon-cake for kids that don’t really appreciate lotus paste. You can find her recipe here and note that I reduced the oil to 50g.
