Soy Milk Mini Hotdog Buns

Who can resist these mini hotdog buns? Once "they" are out from the oven, my kids can't wait to have a few of it. Love this recipe shared by Nasilemak lover a few days ago. I did some modification-I replaced the milk to soy milk and it works wonderful too. I love this recipe as the buns still remained soft on 2nd day. A keeper recipe for sweet bread dough as you use for any filling you prefer.

Soy Milk Mini Hotdog Buns
(Make 20mini buns)

Bread dough (Direct Method)
  • 200g of bread flour
  • 130g of low sugar soy milk
  • 35g of fine sugar
  • 3g of instant yeast
  • 1/8 tsp of salt
  • 25g of butter, soften
Filling
  • 20pcs of mini cocktail hotdog, defrost and pat dry
  • White sesame seeds for topping
  • 1 egg yolk + 1 tablespoon of soy milk, Egg Wash

Steps:
  1. Mix all the ingredients except butter in a mixing bowl, combined and knead till it form a dough (I used my Zojirushi BM (Dough setting) to do the kneading).
  2. Add in the butter and continue to knead till it become a elastic and smooth dough. Cover it with Cling wrap and let it rise till double it's size. It normally take 45mins to 1hr for weather like SG.
  3. Divide the dough into 20g mini dough and roll it into balls and let it rest for 10mins.
  4. (Look at the pictorial) Take a small dough, use a rolling pin to flatten it. Close 2 ends like a roll. Try to shape it like a cone and flatten it again. Place the mini hotdogs at the bigger end and roll up like a swiss roll. Place the mini buns into a baking tray with baking sheet. Repeat the rest. Let it proof for another 30-45mins.
  5. Before sending the buns into the pre-heated oven (180C), Apply egg wash and sprinkle some white sesame seeds on top. Bake it for 15-20mins or till it's top become golden brown.
  6. Cool it on a wire rack before serve.
Taglicious's Note:
  1. Original recipe call for milk, you can replace the soy milk to milk too.
  2. Every machine heating time & temperature is different, please adjust the baking time accordingly.

Softmeal Bacon loaf [Using Zoji BM]

B stand for Bread. Bread act a very important role in our life as we had it for breakfast almost everyday. B also stand for Bacon. By adding in this savory ingredient sure give extra fragrant & taste to the ordinary bread. I am happy with the bake as it is really soft and so nice until it can be eaten by its own without any spread. Do give it a try, I am sure you will love it and make it again. 



Softmeal Bacon loaf [Using Zoji BM]
(Make one 450g of loaf)
(Setting: Soft bread mode, 3hrs)

Starter dough (12hrs before making bread)
  • 30g of wholemeal flour
  • 30g of bread flour
  • 60g of water
Mix everything well in a air tight container and chill in the fridge for at least 12hrs. This starter dough can keep in the fridge for up to 3 days unless it turn its color. 

Main Dough 
  • Starter dough (All the Pre-dough prepared, Can use it directly from the fridge)
  • 180g bread flour
  • 3g instant yeast
  • 2g salt
  • 20g brown sugar (You can use white sugar too)
  • 10g honey
  • 6g milk powder
  • 100ml milk
  • 14g butter, soft
  • 120g of Back Bacon, diced and stir-fry it till brown. Set aside for adding in once BM beeps!
Tools: Zojirushi Bread Maker

Steps:

  1. Activating the BM to soft bread mode which need 3hrs for my Zoji BM. Take out the bread tin and start adding in the ingredients.
  2. Add in the milk, honey and pre-dough into Zoji BM first.
  3. Follow by the bread flour.
  4. Add in the sugar, salt & milk powder at 4 side of the Zoji BM
  5. Dig a small burrow in the bread flour and add in the instant yeast.
  6. Put the bread tin back into the BM and wait for the machine to start kneading.
  7. Once everything form into a dough, add in the butter (Abt 5mins after the kneading) and continue to let the BM do the kneading. 
  8. Once the BM's beep, add in the bacon and let it continue to knead. 
  9. Let the BM do the rest of the job, after the whole process end, (For me, at 1.30hr left, i will take out the kneading blade from the BM and shape the dough into a nice ball and place it back to the BM for final proving and bake) you will have a loaf of yummy bacon loaf.
  10. Bring out the loaf from the bread tin immediately after it is baked. Left it on a cooling rack & let it cool down completely before slicing it.
Taglicious's Note: 

  • Try to clear the loaf on the same day as it contains bacon else keep it in the fridge and re-heat again before consume.
  • Every brand of BM is different, please add the dry and wet ingredients as per your machine's instruction. 
Nothing fancy, serve the bread with a slice of cheese! Breakfast is done!
