Pumpkin soup

It's mid week already! Hang on Everyone!

What will u do when u have a big pcs of pumpkins in the fridge? Oh yes, I will add them to my porridge, soup & rice dishes but today I feel like having a bowl of pumpkin soup itself to start the day. I used my Thermos shuttle chef 1.5l to prepare it before I sleep yesterday & it ready to serve this morning with the help my handled blender! Heehee. Yes, I do have a lot of kitchen appliances to help to ease my job.

Pumpkin soup 
(Using Thermos shuttle chef 1.5L)
(Serving for 3-4pax)
Ingredients
  • 1 tablespoon olive oil
  • 500ml water / stock
  • 400g Japanese pumpkin 
  • 100g potatoes 
  • 120g of yellow onions
  • Salt & black pepper to taste

Wholemeal buns

Tomorrow wholemeal buns to go with pumpkin soup for breakfast!

Wholemeal buns 
(Make 9pcs)
Ingredients
  • 210g of milk
  • 30g wholemeal flour
  • 270g bread flour
  • 30g sugar
  • 2g salt
  • 3g instant yeast
  • 15g olive oil
  • 1 tablespoon of flaxseed(optional)
Steps:
  1. Knead everything with bread maker/mixer/hand till window pane stage/dough become smooth
  2. Proof for 1 hr (1st proof)
  3. Shape it into 50g roll
  4. Proof for 1 hr again (2nd proof)
  5. Bake for 20-25mins at 180c

Egg Salad & Honey Mustard Salad dressing

Egg salad for lunch today & I mix my own salad dressing. 

Honey Mustard Salad dressing
(Serving for 1)
  • 1 tablespoon of apple cider vinegar 
  • 1 tablespoon of olive oil
  • 1 tablespoon of honey
  • 2 tablespoon of mustard sauce 
  • 1/4 teaspoon of salt
  • some black pepper

Steps: Put them in a small container and close lid to shake well before serve.

Happycall "clay pot" Chicken Rice

One dish meal make wonder! Happycall "clay pot" chicken rice which my family enjoy a lot.
This time I tried Feng He light and dark soy sauce. I got it from the recent food fair. I am happy with to the result.
Yummy one pot rice!
Happycall "clay pot" Chicken Rice
(Serving for 3-4 pax)
Ingredients
  • 180g rice (washed)
  • 240ml water 
  • 12pcs winglets (Can be any part of chicken)
  • 6pcs dried mushrooms (Soaked and sliced)
  • 3 tablespoon minced garlic
  • 1 stalk chinese sausage (sliced)
  • 1.5 tablespoon dark soy sauce
  • 1.5 tablespoon light soy sauce
  • 1 teaspoon sesame oil
  • 1.5 oyster sauce (optional)

Ingredients needed 
Marinate it for at least 1-2hrs

Note:
1) For those without this sauce, pls add in some sugar and 1 tablespoon of oyster sauce to add a little more flavor. 
2) No worry with no Happycall. This can be done is rice cooker too.
3) Please adjust water to cook rice as I used my rice cup to estimate the measurement to share with u
4) Cooking time varies as everyone stove is different.
