Homemade Chinese Rice Noodle Rolls (“įŠč įē” in Mandarin).
We enjoyed this savoury soft and silky Chinese rice noodle rolls very much. ð
Give this popular Chinese Dim Sum a try at home too!
Recipe (4 serving)
Ingredients:
- 140g rice flour
- 60g Tapioca starch
- 40g wheat starch
- 1/8 tsp salt
- 440ml water at room temperature
- 4 tablespoon vegetable oil
-360ml water (hot boiling water)
- shrimps (depend on how much u want to put into your ccf), pls cook the shrimps and set aside for later use
-chopped spring onions -sesame seed (roasted)
Sauce for Chinese rice noodle rolls
- 1 tablespoon light soy sauce
- 120ml water
- 1 teaspoon sugar
- 1 tablespoon oyster sauce
- 1 teaspoon fish sauce
- 1/2 tablespoon sesame oil
Steps for sauce
1) Combine all ingredients except sesame oil in a small
pot.
2) Simmer the sauce on low fire till it boils. Off the
fire and add in the sesame oil. Set aside for later use.
Steps for Chinese rice noodle rolls:
1) In a big mixing bowl, combined all the flours, starch
and salt. Add in the room temperature water and mix well using a whisk..
2) Add in hot water and oil and mix well .
3) Set aside for at least 30mins.
4) Boil water inside a large wok and position a steaming
rack in the Center.
5) apply a thin layer of oil on a tray. preheat the tray
to make ccf for 1mins. Add in 1-2 scoops of the batter (depend on the size of
ur tray) and cook for 2-3 mins..
6) Remove the tray from the steamer. Add in your cooked
shrimps and spring onions. Use a scrapper to loosen the bottom edge and start
rolling till a roll of ccf is formed..
7) Drizzle the Chinese rice noodle rolls generously with sauce and garnish with spring onions and sesame seed. Serve it while its hot! ð
