Mushroom Rice
(Serving for 3 paxs)

Ingredients
- 1.5 cups rice (Based on your rice cooker cup measurement)
- 1.5 cups water (Based on your rice cooker cup measurement)
- 150 grams Portobello mushrooms, sliced
- 5 pcs garlic, minced
- 2 pcs shallot, sliced
- 2 tablespoons olive oil
- 2 tablespoons oyster sauce
- Pepper to taste
Pot: Le Creuset 20CM cast iron pot
Steps:
- Heat up the cast iron pot. Add in olive oil, garlic & shallots. Sauteed it till fragrance.
- Add in portobello mushrooms and stir fry for 1-2mins.
- Add in oyster sauce & pepper, stir well
- Add in uncooked rice and mix well.
- Add in water and mix well.
- Cover the lid and let it continue to cook in the cast iron pot for 15 mins under low fire,
- After 15mins, off fire and let it simmer for 10 mins. Give a good stir before serve.
Note:
- You can use a rice cooker to do the cooking too.
- Cooking time in cast iron varies due to size & stove used,
- If you double/triple the recipe, please adjust your cooking time longer.
