Mushroom Rice

We are mushrooms lovers. We won't get sick of having mushrooms in my meals. I cooked this mushroom rice many times in a month for gathering. This dish is so simple to prepare yet delicious and well received by my friends. Christmas is coming! Trust me, cook this dish to impress your guests.



Mushroom Rice
(Serving for 3 paxs)

Ingredients
  • 1.5 cups rice  (Based on your rice cooker cup measurement)
  • 1.5 cups water (Based on your rice cooker cup measurement)
  • 150 grams Portobello mushrooms, sliced
  • 5 pcs garlic, minced
  • 2 pcs shallot, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons oyster sauce
  • Pepper to taste
Pot: Le Creuset 20CM cast iron pot 

Steps:
  1. Heat up the cast iron pot. Add in olive oil, garlic & shallots. Sauteed it till fragrance.
  2. Add in portobello mushrooms and stir fry for 1-2mins.
  3. Add in oyster sauce & pepper, stir well
  4. Add in uncooked rice and mix well.
  5. Add in water and mix well.
  6. Cover the lid and let it continue to cook in the cast iron pot for 15 mins under low fire,
  7. After 15mins, off fire and let it simmer for 10 mins. Give a good stir before serve.

Note:
  • You can use a rice cooker to do the cooking too.
  • Cooking time in cast iron varies due to size & stove used,
  • If you double/triple the recipe, please adjust your cooking time longer.
